Meal Planning Monday

Monday:
Breakfast - Mango lassi, 2 slices whole wheat toast w/jelly, 2 slices turkey bacon, coffee (definitely didn't care for the Mango lassi, but I think it was the taste of the Greek yogurt that I didn't care for. It also took a long time to chop the mango, so when I make this again I'm replacing Greek yogurt with vanilla, and chopping the mango the night before if I eat it on a school day. I was rushed this morning!)
AM snack - Strawberries with Splenda and FF Cool whip
Lunch - Spicy goulash (it made so much, and I loved it so much that I've eaten it almost every day!), applesauce, carrot sticks
PM snack - 2 T almonds
Dinner - Easy Chicken Strips, Herbed twice baked potato (both are recpies found in my Taste of Home: Diet Comfort Food cookbook), steamed broccoli, chocolate banana smoothie

Tuesday:
Breakfast - 1-1/2 c. Cheerios, banana, 1/2 c. orange juice, coffee
AM snack - Cheese square
Lunch - Easy Chicken Strips leftovers, carrot sticks, red grapes
PM snack - 2 T almonds
Dinner - Beef fajita salad w/Baked Tostitos, and reduced fat sour cream (for dipping only), 1 c. milk, Jello pudding cup

Wednesday:
Breakfast - 1 c. cappuccino smoothie, 1 egg scrambled, 1 whole wheat mini bagel, coffee
AM snack - Cheese square
Lunch - Lean beef burger w/no bun, 1/2 baked potato, salad
PM snack - Almonds
Dinner - Beef fajita salad leftovers, 1 c. chocolate milk

Thursday:
Breakfast - 1 NutriGrain waffle, 2 slices turkey bacon, FF plain vanilla yogurt, coffee
AM snack - Strawberries w/Splenda
Lunch - Grilled ham and cheese sandwich, 25 pretzel sticks, carrot sticks
PM snack - 100 calorie Kettle Corn popcorn
Dinner - Grilled Chicken Pecan Salad (Cheddar's), chocolate banana smoothie

Friday:
Breakfast - Scrambled egg + scrambled egg white, 1 whole wheat mini-bagel, banana, coffee
AM snack - Grapes or an apple (if grapes have gone bad)
Lunch - Turkey bacon BLT on 2 slices whole wheat toast, 25 pretzel sticks, carrot sticks
PM snack - 2 T almonds
Dinner - at my parents' house getting ready for our Saturday garage sale

Saturday Weekly Weigh-In

I am SOOOO happy to report that I'm finally seeing my weight go down! I didn't officially weigh in last Saturday because we were on Spring Break (I'm pretty sure the scale would have said +5 pounds anyways!), but I did go to the dr for a regular physical the Monday of Spring Break, and since that visit, I've lost 1.6 pounds!! It's not a huge number, but at least it's going down! I've got about 8 more to go to hit my goal :)

Why I prefer Wii bowling

Saturday of Spring Break was the day of my cousin's housewarming/meet-the-fiancee-party in College Station! I got to see both of my cousins (that I rarely see anymore), and then of course my immediate family (parents, sister, brother-in-law, niece, nephew). We had a GREAT time! Since Michel and I had already decided that we wanted to make this a little Spring Break vacation, we were staying in town Saturday evening. The rest of our family went home, so we got to enjoy quality time with my cousin and his new fiancee. We went bowling first and then out to eat.

 And then, I can't forget to add pictures of our game scores! We actually bowled 3 games, but I only took pictures of the first 2 because by the time the last person bowled in the last game, we were out of time and our screen shut off. All I have to say is be prepared to be amazed by our bowling scores!

That's right....I got a whopping 34 on our first game!! Bowling is like golf though, right?? The lowest score wins?? :)

By game 2, my score was now 50! I'm improving!

Like I said, there wasn't time for me to snap a picture of our bowling game scores in the third game, but my score was in the high 50s....it was some improvement!

We had such a great time in College Station with our family, and unexpected date night with friends!

I finally have time to blog!!

Yay for finally having time to blog about something other than my meal planning (which by the way has been very helpful in sticking to low-cal meals)!

As most everyone knows, last week was Spring Break! I had a great time catching up with my very best friend (who, I'm proud to say, has been my best friend since around the 8th grade!). Unfortunately, I don't always remember to take my camera with me, or I just don't feel like it's a picture-worthy moment, so I don't have a ton of pictures.

During the last weekend of Spring Break, Michel and I took a mini-vacation to College Station. I have a cousin who lives there, and we were having a housewarming/meeting his new fiancee party for him. On Friday night, I texted a friend of mine (she and her husband went to A&M) to ask where some good places were to eat, and it turned out that she and her husband also decided to spend the weekend in College Station! So we all met up for dinner and ice cream, and the Zellners gave us a grand tour of A&M!

Here are pictures of Ray and Alicia Zellner, and Michel and I (below) standing under the Century tree. For anyone whose not familiar with A&M traditions, you ONLY stand under/walk under this tree with the person that you're planning on spending the rest of your life with.

It's official! Michel's stuck with me for the rest of his life :) Not only did we take wedding vows, but now we walked under the Century tree, so he promised to stay with me forever two different times!

We had dinner at this place called Blue Baker. I just got a sandwich, but man, was it delicious! Then, of course, we had to wash it down with some ice cream, so we went to Ben & Jerry's!

Meal Planning Monday

**This week I'm trying out some new recipes from a cookbook that my mom got me for my birthday that's called Diet Comfort Food from the people at Taste of Home. A lot of the recipes sounded delicious and very do-able. I'll post recipes if any are particularly amazing!**

Monday:
Breakfast - 1 c. cappuccino smoothie, 2 strips of turkey bacon, 1 mini bagel, 1 c. coffee with creamer
A.M. Snack - Banana
Lunch - Whole tuna sandwich, red grapes, carrot sticks
P.M. Snack - 2 TB almonds
Dinner - 1/2 chicken breast, small baked potato, green beans, 1 c. milk, Jello pudding cup

Tuesday:
Breakfast - 1/2 c. granola cereal, coffee w/creamer
A.M. Snack - Banana

Lunch - Whole tuna sandwich, small apple, carrot sticks
P.M. Snack - 2 TB almonds
Dinner - 1/2 chicken breast, salad, 1/2 c. milk, chocolate banana smoothie

Wednesday:
Breakfast - 1 scrambled egg, 1 mini bagel, 2 slices turkey bacon, coffee w/creamer
A.M. Snack - Cheese square
Lunch - Toasted ham and cheese sandwich, red grapes, carrot sticks
P.M. Snack - Small apple w/1 T peanut butter
Dinner - Spicy goulash, salad, glass of water, chocolate/peanut butter parfait

Thursday:
Breakfast - 1 c. Cheerios, banana, coffee w/creamer
A.M. Snack - Cheese square
Lunch - Whole tuna sandwich, 1/2 c. applesauce, carrot sticks
P.M. Snack - 2 T almonds
Dinner - Spicy goulash, salad, glass of water, chocolate/peanut butter parfait

Friday:
Breakfast - Avena oatmeal shake (I'm not sure how it will taste, but the Internet reviews made it sound delicious!), 2 slices turkey bacon, coffee w/creamer, banana
A.M. Snack - 1/4 c. raisins
Lunch - Whole tuna sandwich, cheese square, carrot sticks
P.M. Snack - Small apple
Dinner - Subway sandwich

Saturday: 
Breakfast - 1 egg scrambled w/ham and cheese, 1 mini bagel, 1 banana, 2 c. coffee w/creamer
Lunch - ??
Dinner - Lean beef burgers on whole wheat toast with homemade French Fries
Dessert - Frozen yogurt

Sunday:
Breakfast - 1/2 c. granola, banana, coffee w/creamer
Lunch - ??
Dinner - Leftover burgers and fries

Meal Planning Monday

There is no meal-planning going on this week because it is Spring Break!! There's too many days where we're going out to eat with parts of Michel's family, I'm going to lunch with my very best friend ever, and we'll be out of town Friday-Sunday, so that being said it's going to be impossible to really plan meals! Hope all of my teacher friends have a great, and relaxing Spring Break!!

We clean up nicely!

Most people know that Michel was invited to the Allen Police Awards Banquet that took place a week ago! We RSVP'd that we were going to go, and got all dressed up for the big event! I own the staple LBD (little black dress) that I absolutely LOVE, yet hardly ever get to wear, so I was so excited that I had a reason to wear it! I spent over an hour doing my hair and make up to look my best, and took some pictures of me and my handsome firefighter :)


Most people also know that when we got to the banquet, our names weren't even on the guest list and we felt extremely awkward! So we decided that we'd have more fun going on a date - just the two of us! So we stayed all dressed up and got some delicious Mexican food at Gloria's, and then got ice cream at Cold Stone! I had the best time that night! I love my firefighter :)

Saturday Weekly Weigh-In

OK, so I weighed today, and I pretty much maintained my weight from last week. A little disappointing considering that I had put on a couple of pounds, but I did take my measurements, and my waist is an inch SMALLER than it was when I measured in February, and my hips are half an inch SMALLER than they were in February, so that's more encouraging! My goal is still a 5-7 pound weight loss though, so I'll have to remain diligent. The weather is so gorgeous outside today, though that I'm planning on going out for a long walk/run and really enjoy some fresh air!

**By now, this post is definitely not up by Monday, but as you may have noticed, I'm getting lazier as the days wear on!**

Monday: 
Breakfast - 1 c. Cheerios, banana, coffee
Lunch - 1 c. chicken noodle soup, salad
Snack - Yoplait Light yogurt
Dinner - Chicken Helper Chicken Fried rice, applesauce, Jello pudding cup

Tuesday:
Breakfast - 2 scrambled eggs, banana, coffee
Lunch - 1 c. chicken noodle soup, apple, carrot
Snack - Yoplait light yogurt, pretzel sticks
Dinner - Shake 'n Bake chicken drumstick, green beans, corn

Wednesday:
Breakfast - 2 slices toast with jelly, 2 slices turkey bacon, coffee, banana
Lunch - 1/2 tuna sandwich, apple, carrot sticks
Snack - Yoplait light yogurt
Dinner - Heart Healthy pancakes, scrambled eggs

Thursday:
Breakfast - 1 c. Cheerios, banana, coffee
Lunch - 1/2 ham sandwich, apple, carrot sticks
Snack - Yoplait Light yogurt, homemade ice cream (it pays to be a pre-K teacher!)
Dinner - Sunday night's leftover pizza

Friday:
Breakfast - 2 pieces toast with jelly, 2 slices turkey bacon, banana, coffee
Lunch - it's a half day of school! out to eat with co-workers :)
Friday - date with Michel to Medieval Times

Saturday and Sunday are still undecided at this time :)

Saturday Weekly Weigh-In (on Sunday)

My mom reminded me this evening that I haven't posted on my blog in quite some time. Last weekend, I purposely didn't do it because it was my birthday, and I just didn't care. This week, I really didn't want to do it because I stepped on the scale and I'm up 2.6 pounds :( 

This was semi-depressing to me, however, I've also talked to my doctor about some side effects I have from my medication that I'm on, and she's switching me back to my old prescription. She's pretty confident that weight gain (I've gained about 5 lbs since January) is being caused by the new medication. So, I'm kind of encouraged to know that I might be seeing results here in the upcoming weeks! In the mean time, I'll keep eating fairly healthy (with the exception of today since Michel and I just ordered a pizza for dinner!) and working out consistently until I see some pounds gone!
